Fiesta Chicken Casserole

2 Cups Cooked Chicken Breast,

2 Cups Cooked Pasta Shells

2 Cups 2% Cheddar Jack Cheese

1 can Reduced Fat Cream of Chicken Soup

1 Can Rotel

1/2 Cup Skim or FF Milk.

 

Mix all together

 

Cover top with cheese.

350-Degrees for 20 Minutes.

Makes 4 servings- 10 pts per serving
Serves 4

Mashed "Potatoes"


8 oz uncooked cauliflower, florets
3 small uncooked yukon gold potato(es), peeled, cut into 1-inch chunks (about 10 oz)
2 clove(s) (medium) garlic clove(s), peeled
1 tsp table salt, divided
1/4 cup(s) low-fat milk
2 tsp salted butter
1/8 tsp black pepper
1 Tbsp chives, fresh, snipped

 

Instructions:

Place cauliflower, potatoes, garlic and 1/2 teaspoon of salt in a medium saucepan. Add enough water to cover ingredients and bring to a boil. Boil until vegetables are tender, about 10 to 15 minutes; drain and return to saucepan.

Stir in milk, butter, remaining 1/2 teaspoon of salt and pepper; mash with a potato masher until smooth. Stir in chives and serve. Yields about 1/2 cup per serving. 3 pts per serving.

Pumpkin Fluff



1 Container ff cool whip
1 Sugar free/ff vanilla instant pudding
1 Can of pumpkin purée
Pumpkin pie spice (as much or as litle as you like)

Mix all together and chill before you serve.

Good by its self, graham crackers,nilla wafers,....

Taco Rice Bake



Serves 4 
8 WW points plus per serving

2 cups cooked rice
1 lb lean ground beef
1 packet taco seasoning mix
1/2 c water
1 c FF shredded cheese
2 c shredded lettuce
1 large tomato chopped
salsa, optional

Spray fry pan, brown meat over med-high heat. Mix water and seasoning mix and set aside. Drain off excess fat. Put meat back into pan add water mixture. Add rice. Cook for 2 minutes. Top with Cheese and let it melt. Top with lettuce, tomato and salsa just before serving.

3 Wasa Crackers  (2 pts) topped with 2 Light Swiss Laughing Cow Cheese wedges (Other flavors are ok but the swiss is 2 wedges for 1 pt) and 6 slices (2 each wasa) Oscar Mayer lunch meat.(PF) (1 pt) 4 pts



Cottage Cheese Treat- 1 C. Fat Free Cottage Cheese (PF) (3pts) topped with: Fruit or veggies (PF), some of my favorites are Pineapple chunks and Tomato with cucumber and a mexican style seasoning (Julio's) 3 pts


Green "Salad" 1 C Fat Free Cottage Cheese (PF) (3pts) 2T+2t Sugar Free Fat Free Instant Pudding Mix any flavor- I like pistachio (1pt) 3 T Free Cool Whip (0pts) mix together and top with pineapple (PF).

Cored apple(PF) "baked" in microwave sprinkled with a little cinnamon. 0 pts

Low Carb Tortilla (1pt) 2 Tbsp Weight Watchers Whipped Cream Cheese (2pts) 1-2 Tbsp Salsa (0pts) mix cream cheese and salsa together, spread over tortilla, roll. Refrigerate for about 15-30 minutes to get cream cheese hard again. 3pts

Mississippi Mug Pie

3 level tbsp. moist-style devil's food cake mix (not packed)
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
One 25-calorie packet hot cocoa mix (like
Swiss Miss Diet or Nestlé Fat Free)
1 tsp. mini semi-sweet chocolate chips
One 60-calorie sugar-free chocolate pudding snack (like the kind by Jell-O), divided
Optional: Fat Free Reddi-wip


Spray a large microwave-safe mug with nonstick spray. Add cake mix, egg substitute, cocoa mix, and 2 tbsp. water. Mix well.

Add chocolate chips and about one-third of the pudding to the mug, and stir gently to combine. Microwave for 1 minute.

Fluff with a fork, and then gently mix in the remaining pudding.

Microwave for 1 more minute.

Let cool slightly. Top with Reddi-wip, if you like, and dig in!
