Healthy Potato Skins

Serving Size: 8 Potato Skins









2 small potatoes cooked in the microwave until soft. Cut in quarters and spoon out as much of the inside as possible. Your looking for about 3 oz for all the skins. (4pts)
 3/4 tbsp Bacon bits (0 pts)
 2 slices Canadian bacon tiny diced (0 pts)
 2 1/2 tbsp 2% cheddar cheese shredded ( 1 pt)
 2 tbsp fat free sour cream mixed with about 2 tsp ranch powder (more or
 less depending on how you like it) (1 pt)


Top potato slices with ham and bacon bits then with cheese.
Bake in oven until cheese is melted.
Top with sour cream and green onions.

Chili Party Dip

15 oz canned turkey chili without beans
1/2 c fat free cream cheese
4 oz canned jalapeno peppers, drainned and chopped
1 small onion, finely chopped
1/2 tsp hot sauce

Combine all ingredients in a sauce pan and set over medium heat. Cook, stirring frequently, until well-combined and heated through, about 7 minutes. Yields 1/4 cup per serving.

Ingredients:
1 tsp. instant coffee granules
1 tsp. sugar-free French vanilla powdered creamer (like the kind by Coffee-mate)
2 no-calorie sweetener packets (like Splenda or Truvia)
1 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
1/4 cup fat-free ricotta cheese
1/4 tsp. vanilla extract
1/4 cup Cool Whip Free (thawed)
6 ladyfingers (like the kind by Specialty Bakers; found in the produce or bakery section)
1 tsp. unsweetened cocoa powder

Directions:
In a glass, combine coffee granules, creamer, 1 sweetener packet, and 1/4 cup very hot water; stir to dissolve. Add 1/4 cup cold water. Transfer 2 tablespoons of the mixture to a medium bowl.

Add pudding mix to the medium bowl and stir until mostly smooth. Mix in ricotta cheese, vanilla extract, and 1 sweetener packet. Fold in Cool Whip.

Place 3 ladyfingers side by side in a wide bowl (or on a plate). Drizzle with half of the remaining coffee mixture, about 3 tablespoons. Evenly spread with half of the pudding mixture; sprinkle with 1/2 teaspoon cocoa powder.

Evenly layer with remaining ingredients: 3 ladyfingers (side by side), coffee mixture, pudding mixture, and 1/2 teaspoon cocoa powder.

Refrigerate until chilled, at least 1 hour. Enjoy!

3-2-1 Cakes

Cake is 2 pts and cool whip for 2 tbsp is 0 pts

1 box cake mix (any kind)
1 box angel food cake ( MUST be angel food!)
Mix together and store in a plastic container, or a bag.

3 Tbsp cake mix
2 Tbsp water

Mix together in a mug or a bowl. Microwave on high for 1 minute.

You can add things to your cake, I have done a strawberry cake with sliced strawberries, or a yellow cake with chocolate chips and coconut (pictured).
You may need to microwave a little longer if you add things to it.

Top with fresh fruit, your favorite frosting or:

Cool Whip Frosting
1 tub free cool whip
1 box sugar free, fat free pudding mix
Mix together and top cakes.
You can add other ingredients: strawberries, pineapple, chocolate and coconut(pictured)
